Improvement came and in a very noticeable way return to the vineyards. The first year we used an ORGANIC approach to treating the vines. The weather was warm, though during the course of the year we experienced some very strong downpours. Some of the neighbouring winemakers did not manage to protect their vineyards and peronospera carried across onto our vines' leaves. We had grapes that were very healthy indeed. Some of them were dried up and from the very first gulp of the juice we recognised that it had come from an exceptional year.
Benjamin and Jane lent a hand too during the wine harvest... Pinot Noir 2007 - a charismatic wine... Roučí 2007 - an outstanding wine.The whole 2007 vintage deserves to be kept in the cellar and only sold little by little. I rate Stapleton-Springer Winery 2007 as the vintage of the decade!
This red blend has a nose of fresh cherry, red plum and clove. In the mouth, it offers a combination of fruit and spice flavors featuring anise, black plum, Chinese five spice, and black cherry. There is a burst of still-youthful acidity on the finish, but this should be drunk within the next year or two.
