But even after distillation, Black Forest Dry Gin is a long way from being finished. Only when it's been stored for three months in traditional earthenware containers and married with the extremely soft water of its own Black Forest spring does the distillate develop the matchless harmony and mellowness that make "Monkey 47" an absolute pleasure, either in a mix drink or just on its own. Antica Torino VermouthRather than seeking out the exotic, often imported botanicals that go into more modern styled gins and vermouth of Italy, Antica Torino takes a page out of the history books, a time when vermouth was created utilizing what was readily available in the backyard. The decision was made to produce a vermouth that was "of the garden," packed with fresh rosemary, bay laurel, thyme, oregano, wormwood, gentian, rhubarb and more… As for the grapes, they troubleshot through different combinations, and tested both white and red varieties from Piedmont. They decided to go with white wines, including a small % of moscato (also of the region) for its floral elements. For color, burnt cane sugar was chosen rather than industrial caramel. Delicious on its own or mixed into cocktails, Antica Torino Vermouth di Torino will be a wonderful addition to any home or professional bar!
Antica Torino Amaro Della Sacra NVAmaro della Sacra is comprised of leaves, flowers, seeds, roots, resins, spices, and barks; some typical of the territory of Piedmont such as gentianella and hops, others more "exotic", including the vanilla of Madagascar, the green cardamom of the Indies, the myrrh of the Middle East, and the chinchona bark of South America. The amaro is created by macerating the ingredients in grain alcohol and aging until all elements are well incorporated. This cinnamon and clove forward amaro can be enjoyed after meals or mixed in cocktails.
Mitchell and Son Red Spot Irish Whiskey 15 year oldThis Single Pot Still Irish Whiskey has matured for over 15 years in a combination of American Bourbon casks, Spanish sherry butts and Sicilian Marsala wine casks, all contributing rich and complex flavours, making it the top spot in the range. Nose: Pot Still spices with rich cooked fruit, baked apple, mango and black cherry. Hazelnut and a touch of new leather fuse with toasted American oak. Taste: A mix of ripe fruit sweetness from the Marsala seasoned wine casks. While the fruit remains, sweet red pepper and cracked black pepper and some spiciness, finished by notes of American oak and barley. Finish: An extra long infusion of fruit and spices.

In a first for the Distillery, we have taken Ardbeg single malt from ex-Bourbon casks, rested it awhile in ex-rum casks from the Americas, giving us…Ardbeg Drum. Discover a mass of complex flavours as they parade across the palate. Fragrant pine resin and woodsmoke dance alongside ripe banana and pineapple, before lavender, liquorice and vanilla strut into a long, smoky finish - a downright wondrous paradiddle of aromas. Color: Dark gold. Nose: Smoked apple and pineapple, ripe banana, fragrant pine resin and subtle woodsmoke. Dry coco powder, cinnamon and ginger spiced dates and 'floating' lavender notes. Taste: Peppery texture, huge smoky palate, oil, tar, creosote, rich dark chocolate. A treasure of spices - clove, liquorice and ginger mingles with smoked vanilla. Finish: Intense smoke on the finish, more spice with a sweet coffee liqueur finish.

The first involves resting the tequila in charred American White Oak barrels for 11 months. It's then moved to new charred barrels and aged for an additional 30 days. This creates a rich, dark amber colored liquid and a smooth yet complex flavor profile not found in any other Reposado, with hints of cooked agave, vanilla, allspice, clove and oak.
