Color: Attractive, intense, radiant gold, with golden, with slight honey hints. Nose: Intense, complex nose. The seductive candied honey and orange notes emerge first, then secondary aromas of almond, apricot and vanilla appear. Taste: Smooth, impressively dense flavor, with notes of orange and apricot. Beautiful enduring length. The essence of the grape. This wine is an example of the excellence of Sauternes wines: powerful, structured and elegant, with notes of fruits and intense flowers, with great aging possibilities. Food Pairing: Foie gras canapés, with dried figs, or mango chutney. Foie gras, semi-cooked or pan-fried. Extraordinaire with Roquefort, or a quality Gorgonzola.

A beautifully ripe wine, layered with the richest fruit, the acidity offering a bright moment within the richness. Botrytis is there, like a hard core for the pillow of ripe apricots, lychees, spice and fine freshness.

Tasted single blind against its peers. The Clos Haut Peyraguey has a very fragrant, floral bouquet with a "patisserie" element: touches of lemon meringue, apricot and walnut. The palate is very well-balanced, quite taut and spicy on the entry, not quite as "flowing" as other 2007 Sauternes but very zesty and tensile. This is an excellent Sauternes that will need time to harmonize, but all the constituent parts are here. Tasted January 2011.

Displays dried citrus peel and honey on the nose, turning to flowers. Medium-bodied, with lots of sweetness and a spicy aftertaste of honey and tropical fruit. There's plenty of botrytis. Best after 2012.
