Classic Rewind is brewed in homage to old-school hoppy classics like Pliny The Elder, in that dank paleolithic era before Northeast haze took over the world. As such it is our first ever IPA brewed with 100% barley - no oats or wheat. With multiple boil additions of hops, a whirlpool hop burst, and two dry hop additions of Columbus, Simcoe, and Centennial, we've concocted an ale that shows off a refreshing bitterness laden with layers of delicious resinous classic hops. What makes this IPA contemporary, though, is our unique and inimitable house yeast strain - currently over 50 generations deep and adapting to its environment in our brewery - which imparts its characteristic esters of peach, mango, and white grape. Classic Rewind is completely unfined and unfiltered and its slight haze at refrigerator temperature shifts to crystal clarity as it warms in the glass.
