Aromas waft from the glass... pressed rose florals, dried herbs, kirsch, fraise des bois, stemmy spice. Quite an intoxicating bouquet.
Taste demonstrates more site than fruit. There is an incredible mineral tension in this wine that yields a fascinating texture that offers verve. There is macerated dark cherry, anise, raspberry, with a peppery spice. The texture is delicate with refined and polished tannins and a lifted acidity that keeps this snappy fresh. Each sip begs for another. Very tasty indeed.

From a site that invariably produces supple, charming, gourmand wines, the 2021 Fixin Les Crais delivers notes of plums, berries, spices and smoke, followed by a medium to full-bodied, ample and fleshy palate. It's a lovely wine that transcends stereotypes of firm, tannic Fixin.

The 2021 Fixin Les Crais, which contains a tiny amount of whole bunches, red cherries and crushed strawberry. The palate is medium-bodied with supple tannins, and fine acidity, just missing a little mineralite and complexity on the finish, though it had only been bottled the previous week.
