Miho Imada is an innovative toji (Brewer) based in Hiroshima, and produces several delicious styles including this vibrant showstopper. Vibrant fruit aromas accompanied by violet and fennel persist through the finish. This unfiltered, not-too-dry style makes this a perfect pairing for rich seafoods like pan seared scallops or buttery lobster. It also pairs surprisingly well with dark chocolate!
